Specialty Shop for Uwajima Taimeshi

"Ganso Uwajima Taimeshi Marumizu" is a specialty shop that serves "Uwajima Taimeshi," a local dish handed down in the Uwa Sea in the southern part of Ehime Prefecture. According to the official website, the first generation succeeded it in 1946, and it has been handed down to the second and third generations. There are also stores in Matsuyama and Dogo.

What is Uwajima Taimeshi?

Unlike taimeshi made with cooked rice, Uwajima Taimeshi is a dish in which raw red sea bream sashimi is placed on top of rice along with a sauce containing egg and condiments. It is said to have originated when the Iyo Suigun navy, which was based in the Uwa Sea, and fishermen placed raw sea bream meat on top of rice on board their ships. They offer both wild and farmed red sea bream, served with a secret sauce.
